Throughout the year, we clear the lots by hand, with small mechanical brush cutters, or grazing.

In March, we plow the area around the wide root system of each tree, either manually, where the terrain is rocky (a usual occurrence in the area of Southern Peloponese) or with small tractors.

During March and early April, we graft wild olive trees with sprouts of old genetic material, which come from the old olive trees in our estate, so that we preserve and renew our koroneiki variety in the purest way.

Pruning is done by hand, from January through April.

We fertilize our trees, using only carefully selected goat manure, every two years, during November, and with a pulp of shredded olive leaves coming from our pruning, every year in February.

From November to January, depending on the ripening of the fruit – a most important matter – we pick the olives, we clear them and put them in small sacks by hand.
